Not every kitchen project has to feed a crowd or fill a pantry shelf. Some of them are just supposed to be dessert for two people who've had a long day.
This one started with four apples. That's all. No bushel, no canner, no spreadsheet. Four apples, sliced up and tucked into a couple of crocks, with a crumbly cinnamon topping piled on top.
Look at them. They're sitting on the stovetop like two tiny, very proud little cottages, topping heaped high and cinnamon-brown. One for Grumpy, one for me. No sharing, no splitting, no "just a bite." Two crocks, two people, perfectly fair.
Small-batch cooking gets overlooked around here. When you're a canner, everything wants to be a case of twelve. But there's something about a dessert made for exactly two that feels like a little gift to the day. It also makes about the right amount of dishes, which I consider a love language.
Now, the recipe. I'd love to give you one. I honestly just winged it, and I couldn't repeat it if I wanted to. No measuring cups, no notes, no timer I can vouch for. What I can give you is the general idea:
The Idea (Not a Recipe)
- Slice about four apples into a couple of small crocks or ramekins.
- Season them with a little sugar and cinnamon, and taste as you go.
- For the topping, rub cold butter into flour, brown sugar, and cinnamon until it looks like wet sand, then pile it on high.
- Bake until the apples are tender and bubbling and the topping is golden.
That's it. Trust your eyes, trust your nose, and don't let a missing measuring cup stop you.
If you've got a scoop of two-ingredient ice cream in the freezer, you know what to do. (I'm still working on the plastic-free cover for it. Details in that post, ideas welcome.)
Four apples. A little love. Two spoons.
