Remember that wagon of tomatoes that ambushed us after the lake weekend? Tonight, they meet their destiny.
This is my favorite kind of kitchen evening: two sheet pans, one oven, and the smell of roasting tomatoes taking over the entire house. Top rack: tomatoes packed shoulder to shoulder with jalapeños tucked in between like little green troublemakers. Bottom rack: onions and banana peppers going soft and sweet. Everything gets roasty and blistered and concentrated, and the whole batch is headed for salsa jars.
Roasting first is the step I'll never skip. Raw tomatoes make salsa; ROASTED tomatoes make the salsa people ask about. The edges char a little, the sugars wake up, the jalapeños mellow from "whoa" to "hello," and the kitchen smells so good the dogs relocated to the kitchen floor for supervisory purposes. They contribute nothing. They are essential.
There's something deeply satisfying about a full oven on a September night — the garden's last big push turning into winter's future taco nights, one sheet pan at a time. Somewhere in February, we'll crack open a jar of this and be right back in this kitchen, lake-weekend tomatoes and all.
The putting-up month is officially in full swing. The oven's earning its keep, and so am I.
