Cook Once, Eat All Winter: The Great Pepper Stuffing

A gorgeous harvest of glossy green bell peppers piled on a wooden countertop

Look at these. LOOK AT THEM. I set this harvest on the counter and stood there admiring my own garden like a proud parent at a graduation, except the graduates are peppers and the diplomas are all made of ground beef and rice.

Here's the philosophy, and I will die on this hill: I cook ONCE, and Grumpy and I eat like we have our lives together on a random Tuesday in the dead of January, without me touching a single dish. Stuffed peppers are the perfect vehicle for this scheme. They freeze like an absolute dream, they reheat like they were made that same day, and there is nothing — NOTHING — like opening the freezer in the dead of winter and finding a whole shelf of already-finished dinners just sitting there, smiling at you, like "we got this, go put your feet up."

Two trays of halved and hollowed green peppers, standing ready in parchment paper

So the peppers got halved and hollowed out — two full trays, standing at attention in their little paper nests like they knew exactly what was coming and had made their peace with it. And before anyone accuses me of wastefulness: those pepper tops did NOT go in the compost. Oh no. Every single one got diced up and tucked into the freezer for later, because a good pepper top has range — it's a pizza topping in one life and a Saturday omelet in another, and I refuse to let a perfectly good pepper cap retire early just because its bottom half got a more glamorous job.

Then came the filling — a simple beef and rice situation that doesn't try too hard, because a good stuffed pepper has never once needed my help overcomplicating it.

Two trays of stuffed green peppers, baked golden and bubbling, ready to serve or freeze

Into the oven, and out came a tray of golden, bubbling, deeply smug-looking dinners, the kind that make you feel like a woman with her whole life in order, even on the days you are, in fact, wearing yesterday's shirt.

This recipe scales however big your own pepper situation is — built to stretch from a quiet dinner for two all the way up to a full freezer-stocking operation, same as what happened in this kitchen. Cook the whole thing once, freeze what you don't eat tonight, dice up the tops for later, and let winter-you send fall-you a thank-you note.

Grumpy has already asked, with his whole chest, when these are back in rotation. The answer is: the day I get tired of hearing about it. So. Never.
